
But I'm home now, the weather has finally started to clear, and I'm looking at 4 days of vacation before I have to be back at work again.
Our Thanksgiving celebration will be a little non-traditional again this year, since, like last year, Kevin has the 24 hour duty shift starting tomorrow morning. And then has to be back again for another 24 hours on Sunday morning. This meant that we can't travel anywhere for the holiday. Due to the time constraints, we decided to spend Thanksgiving here, just the two of us. Friday, we'll hit the malls after Kevin gets off work at 8am. Too late to catch the early bird sales, but still in time to hopefully hit up some good Black Friday sales and (fingers crossed!) get some Christmas shopping done. Friday night I'll make the traditional Thanksgiving meal, with a few minor tweaks...turkey roast, not a stuffed turkey, and good ol' Hungry Jack potatoes since I haven't yet mastered the skill of making decent mashed potatoes from scratch. Saturday we'll be seeing Happy Feet at the IMAX here at the beach. And so starts the holiday season.

I personally think scratch potatoes are overrated. We use Idahoan 4 cheese mashed potatoes and they are always perfect. It's also energy saving--no boiling, peeling, running the mixer. Add water and stir. And feel environmentally righteous.
